Tex-Mex Beef Stew
Prep Time: 30 min
Cook Time: 5 hours- slow cooker

This is a slow cooker recipe, but it can also be made with
dutch oven on range top or in oven (covered and low
simmered for 2 hours; or 350*F for 1-2 hours till beef is
softened.) Add the cold roux to this after 45 min of
cooking).

INGREDIENTS:
1-2 lb. Beef Stew meat cut up smaller
1/2 (750-milliliter) bottle RED Moscato wine
flour
1 pkg McCormick Beef Stew Mix
2-4 tablespoons olive oil
1 1/2 sticks salted butter
2 cups beef broth
3 cups water
8-12 ounces picante sauce
1 green pepper
5-6 mini assorted colored peppers
1 jalepeno pepper
1 small onion
1 carrot
1 zucchini
1/4 cup fresh parsley
16 ounces canned diced tomatoes or more
2 cloves garlic diced fine
COLD ROUX see notes

COLD ROUX INGREDIENTS & DIRECTIONS:
1/2 stick of VERY SOFT butter with about 1/4 cup or more of
flour. In a bowl, mix with fork till it looks like lumpiness is gone.
During last 2 hours of cooking, add to crock pot and stir in.

NOTE: Beef Stew meat is from round or chuck portions =
TOUGH. You can upgrade by using TOP sirloin (not strip) or beef
tenderloin (filet mignon) cut up into cubes.
You can also double the amount of canned diced tomatoes (or
use whole canned San Marzano tomatoes and cut them up). Use
the liquid from the canned tomatoes as well.
If you can't find the mini assorted colored peppers, slice up 1/2
each of red, yellow and orange bell peppers. Just slice off the
stem of jalepeno pepper. Save the dicing of fresh parsley till last.

DIRECTIONS:
Marinate beef stew meat in wine for 4-6 hours or more.
Drain, pat dry with paper towels.  Dust with flour covering all sides.
Saute in large heavy pot (preferrably cast iron) with olive oil and
3/4 stick butter. Remove meat, set aside.
Deglaze with a splash of beef broth or wine, scraping up scraps
into deglaze with spatula or whisk.
Add diced up veggies and saute, adding a splash more oil and  
1/4 stick butter for a few minutes.
Just barely cover with some water and simmer till soft.
Transfer meat and veggies to crock pot.
Add canned diced tomatoes, picante sauce, beef broth and
water, beef stew mix, stir.
Slow cooker HIGH 2 hours, then set to LOW for 3 hours, stirring
occassionally.
Add Cold Roux last 2 hours.
Before serving, top with diced up fresh parsley. Serve with sliced
avocado's, rice, corn bread or warmed up Italian Bread or
Tortilla's. You can also top with a dollup of sour cream as well.
