Joe's Crab
Shack Crab
Cakes
Yield: 4-6 patties

INGREDIENTS:
2 1/2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1 egg yolk
1 teaspoon dry mustard
1 teaspoon black pepper
1 dash crushed red pepper
1 dash old bay seasoning
1 dash salt, onion powder, garlic powder
1/3 cup mayonnaise
1 1/4 cups fresh bread crumbs
3 tablespoons chopped parsley
1 pound crab meat
1 tablespoon butter or margarine (or more)

DIRECTIONS:
Combine first 9 ingredients.
Fold in bread crumbs and parsley.
Fold in crab meat.
Form into 4 to 6 patties.
Form patties, cover with plastic wrap and refrigerate to
firm up before cooking.
Melt butter in skillet. Fry crab cakes in butter for 4 to 5
minutes on each side.

REMOULADE SAUCE:
1 cup mayonnaise or salad dressing
1/4 cup ketchup
1/4 cup minced parsley leaves
1 tablespoon white horseradish
2 teaspoons white vinegar
1 teaspoon grated lemon peel
1 teaspoon hot pepper sauce
In a bowl, mix all ingredients until well blended. Chill till
needed.
