Stuffed & baked with Peaches, served on a bed of Rice with Peas.

INGREDIENTS:
1 defrosted Cornish hen
4 to 6 slices toeasted bread cut up into squares
1 medium onion diced fine
handful celery diced fine
1/2 to 3/4 stick butter
1/2 to 3/4 cup chicken broth
some salt and pepper
1 cup white rice cooked
2 tablespoons frozen green peas defrosted and cooked
1 (12-ounce) can or more peaches WITH syrup, sliced
some bread crumbs

DIRECTIONS:
Thaw and rinse out the cornish hen. Remove giblets etc., and discard.
Saute Onions and Celery in Butter with a few pinches of Salt and Pepper.
Add Broth, simmer till Onions and Celery
are very soft. Add this to the cut up toast, mix well, then stuff this into the Hen.
Place stuffed Hen on rack or tin foil rolled up in strips so it doesn't touch the bottom
of the cooking pan.
Bake 350*F for about 1 and 1/2 hour, the last
half hour topping the Hen with the sliced canned Peaches WITH the syrup.
The last 15 min, sprinkle some Bread crumbs over that.
Line the plate with cooked Rice and Pea's. Carefully remove Hen and put on top of
that, and top with the Peaches
and some syrup, and serve.
