Meatloaf
                                            INGREDIENTS:

1 lb Ground Beef
1/2 Cup ea. Ketchup & Yellow Mustard (@ various times)
dashes of Salt & Pepper
I Onion, diced
1/2 cup or more Bread Crumbs
2 Eggs
4 slices of Bread (cut up and crusts removed)
1 pkg Brown Gravy Mix (pkg directions)
3-6 Potatoes
















Rinse Potatoes, and with a fork, poke holes in them, wrap each in tin foil and Bake 350*F for about an
hour (which is the time it takes the Meatloaf to bake).
NOTE: Whenever I am baking potatoes, I always bake a few more. I let cool, then refrigerate
overnight. The next day I can easily peel them, and then slice and dice them for things like
POTATOES AU GRATIN, or with my morning breakfast...I dice the potatoes and then gently saute
them in a bit of butter and vegetable oil with pinches of Salt and Pepper, till lightly golden brown.
Sometimes I add thinly sliced Green Peppers and Onions to this saute as well. YUM

Chop up and dice Onions and put in large bowl with Eggs with dashes of Salt and Pepper.
Add Beef and some Ketchup & Mustard. Add about 1 cup of Bread crumbs.
Cut up a few slices of bread and add to meat mixture. Mix in together with your hands.






























Spray a Bread Tin with non stick Spray. Put Meatloaf mixture into the pan. Take a knife and make a
slit down the middle
, and drizzle some more Ketchup & Mustard in that.





























Bake with the Potatoes 350*F for 1 hour. Let Meatloaf rest for 10 minutes or so before slicing.
Make Brown Gravy mix according to pkg directions. Plate using a spatula and serve. Save leftovers,
refrigerate and make Meatloaf Sandwiches with Mayo and sliced Onions the next day!!!
