Rice
INGREDIENTS
Rice
A few slices of Sweet Peppers
small amount Diced Onions
Oil
Water
Enchilada Sauce or envelope of
Sazon Azafran

DIRECTIONS
Start to prepare Rice according to
directions. Before you cook it, slice
some Sweet Peppers and dice
some Onions and saute in a bit of
Oil till lightly browned. Add water
and continue to saute until soft.

Add the Peppers to the Rice. Mix in
a bit of
Enchilada sauce for color.
Add a notch of Butter.

Cook Rice.
NOTE:
The bit of Enchilada sauce gives the Rice that nice "golden"
color.
You can also use instead, SAZON AZAFRAN, which is found
in the Mexican aisle of the grocery store. It comes in a box
with little envelopes. It is the "poor man's" Saffron.
Use 1 envelope per 1 Cup uncooked Rice.
I also use 1/2 an envelope and put in a dab of my
Homemade Enchilada sauce as well.
In a pinch, if you have neither, you can use a dab of Tomato
sauce OR Ketchup.
Sweet Peppers and Onions are optional.
If you are using Rice that is NOT instant, put in pot with a
notch or two of Butter, and on low flame, lightly saute Rice for
a minute or two. Then add water, cover and cook.
