Beef Broth/Stock
A starter for all brown sauces and gravies. You will need a small amount of Chicken
Broth/Stock to add to this recipe, see below. Beef Broth can be frozen.

Chicken Broth
Traditionally made with Chickens Feet (they MUST be wrapped up in Cheese Cloth and
discarded when Broth is done!!) Chicken Broth can be frozen. This broth enhances other
broth's and sauces as well.

Espagnole
A simple Brown Sauce. Uses Beef Broth/Stock (which has some Chicken Broth in it),
and is needed when making Demi Glace. Espagnole can be refrigerated for no more than
2 days, so plan ahead.

Demi Glace
A thin Brown Sauce, great for Steaks and Chops.
You will need Beef Broth/Stock (which has some Chicken Broth in it),
to make the Espagnole
in order to make the Demi Glace. Demi Glace can be frozen.

Proivade
A thick Beef Gravy made with Vegetables and Flour.
Uses Beef Broth/Stock (which has some Chicken Broth in it).
Proivade can be refrigerated for no more than 2 days, so plan ahead.

White Sauce
A simple Bechamel sauce

Clear Sauce
Made with Olive Oil and Garlic

Chinese Brown Sauce
Made with Soy Sauce & Corn Starch, see this Ground Beef Chop Suey recipe to make.
You can use this sauce in a variety of ways.  Keep in mind it's preferable to have some
form of pan drippings (beef, pork, chicken, vegetables) to make this sauce, however you
can also just use broth's if you prefer.
