INGREDIENTS:

2 pounds ground beef
1 (12-ounce) package chopped onion
2 teaspoons garlic, minced
1 (14-ounce) can diced tomato, drained
1 (16-ounce) package frozen peas and carrot
3 tablespoons quick-cooking tapioca
2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
2 (24-ounce) packages prepared mashed potatoes
1 to 2 pkg of gravy mix or jar

DIRECTIONS:
1. Cook beef in a large skillet over medium-high heat, until
cooked through. Transfer to slow cooker.
2. Cook onions and garlic in skillet, until onions begin to
soften. Add to slow cooker.
3. Stir in tomatoes, veggies, tapioca, oregano, salt, and
pepper.
4. Cover and cook on LOW for 7 to 8 hours.
5. Top with prepared mashed potatoes. Cover and cook on
low until potatoes are heated through.
6. Top each serving with Gravy, optional
