Cabbage Rolls
INGREDIENTS:
1 large Green Cabbage
1/2 lb. Ground Beef
2 cups Instant Rice
2 cups or more Ketchup

DIRECTIONS:
Remove and discard the core of the cabbage.

Place whole cabbage in gently simmering water in a large pot. After
a few minutes, carefully begin to remove large leaves from the
cabbage and put on a plate.

In a bowl, mix the ground beef, rice and enough ketchup (about 1/2
cup) to make the mixture bind together.

Take a spoonful of this mixture and put in center of leaf. Fold sides
in, then roll up and secure with a toothpick. Repeat with the other
leaves. (use the LARGEST wooden toothpick you can find; even
smaller skewers will work too)

In a large saute pan, add about 2 to 3 cups of water. Stir in
remaining ketchup into the water. Put the cabbage rolls in the saute
pan, cover with more water if necessary so that it goes half way up
the cabbage rolls (do not cover the cabbage rolls though).

Cover with a large tall pot (preferrably) or a lid slightly askew, and
begin to cook them on LOW flame for a good hour or so. Stir and
turn over each cabbage roll every 10-15 minutes. Add more water
and ketchup if needed, you want an almost soupy mixture.
Plate and serve with some of the sauce.
